Fighting Cancer...one salad at a time!


Jason and I went to the Southern Home and Gardens Spring Show last weekend and in the last hour of our time there, we sat down and watched the sweetest old sales lady tried to persuade us to buy a 375 dollar vegetable slicer...IF you know us at all, you know we laughed at her desperate attempt. BUT one good thing did come from watching this "cooking" show and it is that delicious salad up above! This salad is FULL of fresh vegetables... Earth's natural heart healthy, cancer fighting, scrumptious gifts from Mother Nature herself!
So last night I decided to make Jason and I this superfood lettuce free salad for dinner/lunch/next nights dinner/Sunday's lunch...and so on and so on. Yes, I stood in the kitchen for about 45 minutes slicing and dicing and I know what you are thinking... "some snazzy vegetable slicer would definitely make this job easier," and you are totally right! But for those of us that love the kitchen more than our couch...this task did not defeat me at all! And here's the good part...

Ingredients (I bought one of each veggie at Fresh Market...prices vary so I will leave them off this list)

1 cucumber
1 red pepper
16 oz of butternut squash
1 yellow squash
1 zucchini
1 small head of red cabbage
1 lb. of carrots
Creamy vidalia onion dressing

Grab a HUGE bowl and slice and dice until your little heart is satisfied! Finish off with 2 pinches of pepper and 1/2 cup of the onion dressing, toss a few times, and let your body praise you for this filling superfood salad!
