Oatmeal Bites



Ashlyn & I found this recipe via Pinterest and we modified it a little. This is a great snack alternative to have around for kids or adults as well. By making them yourself you know exactly what you are putting into your body which is almost as great as how good these oatmeal bites taste! Typically you will already have most of these ingredients around the house so chances are you will only need to buy a few things. We hope you enjoy!

Ingredients:



1 cup oats $2.79
2 1/2 tbsp Better N Peanut Butter (or whatever kind of peanut butter you already have) $5.99
2 tbsp Nutella $3.64
1 tsp Honey $3.69
1 tsp Vanilla $3.09

Egg Salad with a healthy twist!


We all love egg salad, but the amount of mayo that goes into it can really mess up a diet! Well via pinterest, Elizabeth and I found a healthier version of the favorite egg salad dish.

Ingredients:

Eggs (Lowe's brand) $1.99
Large Hass Avocado $1.99
Chobani Greek Yogurt
(1 6oz container) $1.39
Arugula (1 cup) ~$0.70
Light Mayo (1 tbls) ~$0.19
Toufayan Bakeries
Pita Bread $2.49
Salt/Pepper to flavor

Start by boiling a large pot of water. Once the water is at a boil, gently add eggs, put a lid over it, and turn off the heat. Let eggs boil for 15 minutes.
While your eggs cooking, mix sliced avocado, 2/3 cup of greek yogurt, 1 tbls of mayo, pinch of salt/pepper into a large bowl.

Once 15 minutes is up, put eggs in a large bowl full of ice water to cool them off and end the cooking process.
Crack and peel eggs, give them a rough chop, and add them to the avocado mixture. With a flat spoon, fold eggs into the avocado mixture until it is all mixed together.
Cut pita bread into half and open up each side. Put a handful of arugula in the pita and then fill with the HEALTHY egg salad! Enjoy with a side of fruit or veggies of your choice!

My version of a Grilled Caprese Sandwich...

I love a fresh caprese sandwich filled with tons of mozzarella, sliced tomatoes, and that perfect topping of basil leaves. On Monday, I decided to add my own twist to the classic recipe...

Ingredients and price from Lowe's Foods:

Sliced ciabatta bread from the deli $3.99
Fresh mozzarella $5.99
Fresh basil leaves $2.49
Prego Italian Sauce-
Tomato basil garlic flavor $2.50
Butcher sliced chicken breast (1/2lb) $4.99

Total price $19.96

Put the Prego sauce into a sauce pan and turn heat to medium-low, cover the sauce and let it warm up while you are preparing the dish.
Into a small bowl, mince fresh garlic into a tablespoon of melted butter. With a basting brush, lather the garlic butter onto both sides of the ciabatta bread. Grill the bread for about 2 minutes and then flip it over. While the opposite side is grilling, put the thin slices of mozzarella on top so that it can warm up.
Once you add the mozzarella, put the sliced chicken breast on the grill as well. They will take a minute or two on each side to get nice and hot.
While the bread and chicken are grilling, roll up about 8 leaves of fresh basil and chop to your desired size.
To Plate:
First, put down the ciabatta slices with the mozzarella on top. Then using tongs, remove your chicken slices and lay them over the mozzarella. With a large spoon, put two or three heaping spoonfuls of sauce over the chicken. Lastly, top with fresh basil and a pinch of salt and pepper. Voila! Bon appetit!
